Healthy Meals on a budget continued…

I wrote a post about healthy meals on a budget. Specifically making 3 healthy meals a day for a family of 3 under $20 buying the ingredients from Whole Foods. I did this for a few days then realized we were away for the weekend for a last minute ski trip. I decided that instead of making up new recipes, I would try and make the sort of food we make at home at the moment and see if there is a way we can make it within this budget. So far so good. Reporting is the hard part is it is a bit on the time consuming side. So i’ll do the best I can. I love making healthy gourmet meals from a few of my favorite cook books and will share those with you. Here is a dish we are having tonight. Hearty, Healthy, and fast.

This cost us just under $20 but should be enough for 2 meals easy. One day you can have it with whole wheat bread, another day you can have it with rice or a beet salad.

Preheat oven to 325 Degrees F

2 potatoes cut in large squares
2 large carrots cut in circles
1 onion diced
12 button mushrooms
10 garlic cloves
1 parsnip cut in circles
1/2 cup pearled barley
1 qt organic chicken broth
1 chicken breast cut in cubes
Season with herbs of your choice (I used herbs de Provence) salt, pepper, 1 teaspoon cumin seeds, 4 bay leaves

Put all ingredients in a casserole
Bake in oven at 325 for 1 hour
Serve with bread or rice

  1. Looks delicious! You must have the kind of kids who eat vegetables. We have one who does and another who would rather do without chocolate cake than cave into requests to eat up his veggies…
