Healthy meal on a budget: Tacos!

Tacos are a fun, fresh, and healthy meal for the family to enjoy. A nice strawberry-coconut margarita is always a great drink to have with your tacos. This meal was about $15 to make and took about 25 minutes cooking time.

Main Ingredients:
Whole wheat tortillas
1/2 onion sliced
1/2 bell pepper sliced
1 zucchini sliced
10 mushrooms sliced
1/2 rotisserie chicken sliced

(for added protein, you can add some black beans)

Sauté veggies with a tablespoon olive oil until slightly cooked.
Put in bowl and cover.

Guacamole Recipe:
1/2 avocado diced finely
1/2 tomato diced finely
1/4 onion diced finely
Chili flakes or fresh jalapeño diced finely
1 lime juiced
Salt and pepper

Mix all these together. Add salt to taste. You can also try the Chil Tepin salsa if you are into extreme spicy!

Toppings
Shredded Cheese of your choice
Red cabbage chopped finely

Serve all these ingredients in bowls/plates buffet style and let everyone create their own unique taco!
